Sarah R, a very dear friend contacted me and ask for my Chicken Curry recipe. It's beginning to get colder and nothing is better on a cold day than this. This recipe was given to me by my sister in law Sissy, who is now looking down on us from heaven.
My brother was in the service for 22 years and they were stationed in many different places over the years. When they came back to Texas after he retired, she came home with all these recipes from different regions of the world.
This Chicken Curry recipe is one that she made many times on cold days, or when someone in the family was sick, or just because she wanted to make it, lol.
She passed the recipe to me after I got married and I've been making it ever since.
It's very easy to make, and once you taste it, you'll be making it over and over.

NOTE: The directions on the box of Golden Curry Sauce Mix are different than the recipe that Sandra gave me, but both work well.
Ingredients:
1-2 lbs Chicken, (Pork, Beef, or Shrimp can also be used)
1 - large onion, chopped
2 - large potatoes, diced into chucks
1 - pkg of baby carrots, whole or cut in half
1 - bell pepper, cut into chunks
1 - pkg mushrooms (optional)
2 - tablespoons butter
1 - pkg of Golden Curry Sauce Mix
You can add other veggies that you like as well. Whatever you want.
Directions: For Chicken
Take chicken and boil in about 2 1/2 cups water till done. Remove chicken and let cool till able to debone and cut in cubes or shred
While chicken is cooling, in a small skillet, melt butter and salute' the onions and mushrooms till tender. Drop other veggies back into boiling water that chicken was cooked in. Boil for 15 minutes. Reduce heat and add your onions, mushrooms and chicken.
Break up block of curry and add it to the veggies and chicken. Cover and simmer till veggies are tender and sauce is thick. If it's not thick enough, you can put 1/2 cup of the hot liquid in bowl and add 1 teaspoon of cornstarch. Mix till dissolved and pour into pot. Stir until thickened.
Serve over Rice or eat alone.
